    Serves 4
    1 c. (6 oz) diced cooked chicken breast
    2 c. low-sodium chicken broth
    2 c. water
    1 ¾ c. (one 16 oz can) chunky tomato sauce
    1 c. uncooked instant rice
    1 tsp. dried parsley flakes
    ¼ tsp. black pepper


    1. In a large saucepan, combine chicken breast, chicken broth, water, and tomato sauce. Bring mixture to a boil. Lower heat and simmer for 5 minutes.
    2. Stir in rice, parsley flakes, and black pepper.
    3. Remove from heat, cover, and let sit for 5 minutes. Stir again just before serving.
