2 Roma tomatoes or tomato of your choice
1 small or 1/2 large lemon
2 to 4 tbsp virgin coconut oil
Parsley, to taste
1 tbsp. chopped fresh oregano
Cilantro, to taste
Basil, to taste
Salt, to taste
Alfalfa sprouts, for garnish

Directions

  1. Slice tomatoes and distribute on a plate.
  2. To make pesto topping, squeeze lemon juice into a container, suitable for blending. Add coconut oil, parsley, oregano, cilantro, basil and salt to container and hand-blend all ingredients. Taste and make adjustments to flavor.
  3. Scoop out about 1 spoonful of pesto for each person and evenly distribute on top of all tomatoes. Add a small handful of alfalfa sprouts on top of pesto on all tomatoes.
