    Serves 8
    ½ c. chocolate chips
    Cooking oil, optional
    16 mini phyllo cups
    ¾ c. ricotta cheese
    1 c. plain Greek yogurt
    4 tbsp. super fine sugar
    1 tbsp. espresso powder dissolved in 1 tbsp cold water
    Milk chocolate curls, for garnish


    1. In a small saucepan over low heat, melt the chocolate chips, stirring constantly and adding a few drops of oil to smooth the texture if necessary.
    2. Put a dollop of chocolate into each phyllo cup. Set aside.
    3. In a mixer bowl blend the ricotta cheese, yogurt and sugar until smooth. Add the vanilla, dissolved espresso and cinnamon.
    4. Put approximately 2 tablespoons of the cheese mixture into each shell and garnish with chocolate curls. Chill until serving.
