This Steak Florentine is anything but typical. Sear your steak in a hot cast iron and then place on top of fresh herbs, spices, and lemon juice for an easy, and tasty, infusion.

Directions
Add remaining 1 tablespoon olive oil to a 10-inch cast iron skillet; place over medium heat.
Add steak to hot cast iron. Sear 10 minutes, flipping once halfway through, or until steak is deeply browned and desired doneness is reached, 130 degrees for medium-rare and 145 degrees for medium. Remove steak from cast iron and place onto seasoned plate. Allow steak to rest on top of seasonings for 5 minutes tented with foil. Flip steak and allow to rest for an additional 5 minutes tented with foil.
When ready to serve, cut steak from bone and carve into 1/2-inch slices. Garnish with fresh thyme, if desired.
