    1 ¾ c.water
    1 tbsp.Hy-Vee unsalted butter
    ½ c.onion, chopped
    1(10-oz.) box frozen Hy-Vee chopped spinach, thawed and drained
    3 c.chicken breast, cooked and diced
    1(4-oz.) jar diced pimientos, drained
    1(10.5-oz.) can Hy-Vee 98%-fat-free cream of chicken soup
    ¾ c.light mayonnaise
    ½ c.Hy-Vee shredded Parmesan cheese
    ¾ tsp.curry powder

    Directions

    1. Preheat oven to 350 degrees. Spray a 2-quart casserole dish with non-stick cooking spray.

    2. Prepare rice according to package directions using 1 3/4 cups water.

    3. Melt butter in a large skillet over medium heat. Sauté onion until softened, about 5 minutes. Stir in spinach. Remove from heat, and stir in rice, chicken and pimientos.

    4. Combine soup, mayonnaise, cheese and curry powder; stir into chicken mixture. Pour into prepared dish.

    5. Bake for 20 minutes or until bubbly; allow to stand 5 minutes before serving.
