|1 ¾ c. water|

|½ c. onion, chopped|
|1 (10-oz.) box frozen Hy-Vee chopped spinach, thawed and drained|
|3 c. chicken breast, cooked and diced|
|1 (4-oz.) jar diced pimientos, drained|
|1 (10.5-oz.) can Hy-Vee 98%-fat-free cream of chicken soup|
|¾ c. light mayonnaise|
|½ c. Hy-Vee shredded Parmesan cheese|
|¾ tsp. curry powder|

Prepare rice according to package directions using 1 3/4 cups water.
Melt butter in a large skillet over medium heat. Sauté onion until softened, about 5 minutes. Stir in spinach. Remove from heat, and stir in rice, chicken and pimientos.
Combine soup, mayonnaise, cheese and curry powder; stir into chicken mixture. Pour into prepared dish.
Bake for 20 minutes or until bubbly; allow to stand 5 minutes before serving.
