½ tsp. kosher salt
1 Hy-Vee large egg, lightly beaten
2 tbsp. water
½ c. Hy-Vee all-purpose flour
½ c. Hy-Vee plain panko bread crumbs
1 medium fresh jalapeno pepper, thinly sliced and seeded
3 Hy-Vee part-skim mozzarella string cheese, cut into 5 (3/4-inch each) pieces
Desired dipping sauce, for serving

Directions

  1. Preheat air fryer to 350 degrees according to manufacturer's directions.

  2. Place sweet potatoes in a microwave-safe bowl. Cover with vented plastic wrap; microwave on HIGH for 5 to 7 minutes, stirring once halfway through. Mash sweet potatoes until smooth. Stir in salt; set aside.

  3. Combine egg and water in a shallow dish. Place flour in a second shallow dish and panko in a third dish.

  4. Halve larger slices of jalapeno pepper. Scoop a rounded tablespoon of sweet potato mixture into a small ball. Stuff 1 cheese piece and 1 pepper piece into the center and seal with sweet potato mixture. Repeat with remaining sweet potato mixture, cheese, and pepper pieces to make 13 poppers.

  5. Roll sweet potato balls in flour. Coat with egg mixture and roll in panko bread crumbs. Spray coated balls with nonstick spray and air fry in batches for 4 to 5 minutes or until crispy and golden brown. Let stand for 2 to 3 minutes. Serve with dipping sauce, if desired.
