Combine egg and water in a shallow dish. Place flour in a second shallow dish and panko in a third dish.
Halve larger slices of jalapeno pepper. Scoop a rounded tablespoon of sweet potato mixture into a small ball. Stuff 1 cheese piece and 1 pepper piece into the center and seal with sweet potato mixture. Repeat with remaining sweet potato mixture, cheese, and pepper pieces to make 13 poppers.
Hyvee Culinary Expert TipChile peppers contain volatile oils that can burn your skin and eyes. When working with hot peppers, wear protective gloves.
Roll sweet potato balls in flour. Coat with egg mixture and roll in panko bread crumbs. Spray coated balls with nonstick spray and air fry in batches for 4 to 5 minutes or until crispy and golden brown. Let stand for 2 to 3 minutes. Serve with dipping sauce, if desired.
