3 c. cooked and mashed sweet potatoes
1 tbsp. Blue Bonnet margarine
⅔ c. packed Hy-Vee brown sugar
1 tsp. maple extract
2 tbsp. Hy-Vee flour
¼ tsp. Tones pumpkin pie spice
½ tsp. Hy-Vee salt
1 Hy-Vee large egg
3 c. crushed Hy-Vee corn flakes
Hy-Vee pancake syrup, optional

Directions

  1. Preheat oven to 325 degrees. Stir together all ingredients except for corn flakes. Form the mixture into bite-size balls. Roll in crushed corn flakes.
  2. Place sweet potato balls on a greased baking sheet. Bake about 20 minutes.
  3. Serve with Hy-Vee pancake syrup if desired.
