1 (8 oz) pkg Hy-Vee Select sunrise blend with quinoa flakes | ||
1 ½ c. Hy-Vee 33%-less-sodium chicken broth | ||
2 tbsp. Hy-Vee Select extra-virgin olive oil | ||
1 c. diced onion | ||
1 c. shredded carrots | ||
1 c. diced celery | ||
½ c. diced fennel bulb | ||
2 clove(s) garlic, finely chopped | ||
1 ½ tsp. dried sage | ||
2 tbsp. water | ||
1 c. Hy-Vee pecan pieces | ||
½ c. firmly packed fresh parsley, optional |
Directions
- Prepare sunrise blend with quinoa flakes according to package directions, using chicken broth in place of water.
- Meanwhile, warm olive oil in a saute pan over medium heat. Add onion and saute for 5 minutes.
- Add carrot, celery, fennel, garlic and sage. Mix well, add water and cover. Cook for 8 to 10 minutes until vegetables are tender.
- Add prepared grains to vegetables and stir in pecans and parsley. Serve immediately.
