Directions
Meanwhile, for dressing, place olive oil, vinegar, nutritional yeast, lemon juice, maple syrup, shallot and garlic in a small, tall-sided container. Blend until smooth using an immersion blender.
Drizzle dressing over vegetable mixture in bowl. Toss to coat; let stand for 5 minutes, tossing occasionally.
To serve, transfer vegetable mixture to a large serving tray. Top with pepitas and mint. Season to taste with black pepper.
