1 lbs. red potatoes, scrubbed and quartered
Hy-Vee salt, optional
8 oz. fresh green beans, trimmed
Freshly ground Hy-Vee peppercorns, to taste
Crumbled feta cheese, for serving

Directions

  1. Place potatoes in a large saucepan and cover with cold water. Lightly season with salt, if desired. Cover and bring to a boil.
  2. Uncover saucepan and boil potatoes for 5 minutes. Stir in green beans and continue boiling for 5 additional minutes or until potatoes and green beans are tender. Drain.
  3. Place potatoes and green beans in a serving bowl. Season with freshly ground peppercorns and sprinkle with feta cheese, if desired.
