    Servings and Ingredients

    Serves 6
    6 (10-inch) flour tortillas
4 oz. garden vegetable cream cheese
1 (12 oz) pkg Al Fresco spicy jalapeno chicken sausage, sliced into small pieces
1 c. frozen sweet corn and black bean salad or frozen corn, thawed
4 oz. smoked Gouda cheese, grated
    1 jar(s) prepared salsa
    Sour cream, optional

    1. Place tortilla on sheet of waxed paper or clean work surface. Divide cream cheese equally and spread on entire surface of each tortilla.
    2. On one side of tortilla, place chicken sausage pieces and sprinkle corn in equal amounts. Sprinkle with Gouda. Fold the quesadillas over to cover filling completely.
    3. In large fry pan or griddle over medium-high heat, place tortillas (one or two at a time) and cook until brown spots form, about 3 minutes. Turn and cook the other side.
    4. Remove to cutting board and cut into wedges. Serve with salsa and sour cream, if desired.
