Spicy Jalapeno Chicken Sausage Quesadillas
Servings and Ingredients
|6||(10-inch) flour tortillas|
|4 oz.||garden vegetable cream cheese|
|1||(12 oz) pkg Al Fresco spicy jalapeno chicken sausage, sliced into small pieces|
|1 c.||frozen sweet corn and black bean salad or frozen corn, thawed|
|4 oz.||smoked Gouda cheese, grated|
|1 jar(s)||prepared salsa|
|Sour cream, optional|
- Place tortilla on sheet of waxed paper or clean work surface. Divide cream cheese equally and spread on entire surface of each tortilla.
- On one side of tortilla, place chicken sausage pieces and sprinkle corn in equal amounts. Sprinkle with Gouda. Fold the quesadillas over to cover filling completely.
- In large fry pan or griddle over medium-high heat, place tortillas (one or two at a time) and cook until brown spots form, about 3 minutes. Turn and cook the other side.
- Remove to cutting board and cut into wedges. Serve with salsa and sour cream, if desired.
