|4 oz.||Hy-Vee Pepper Jack Smooth & Cheesy cheese product, diced, divided|
|4||(8-inch) Hy-Vee flour tortillas|
|1 c.||shredded rotisserie chicken, divided|
|1||small red bell pepper, diced, divided|
|1||green onion, finely sliced, divided|
- Heat a large nonstick skillet over medium heat.
- Place one tortilla in the skillet and place 1/2 ounce of cheese on half of the tortilla. Top with one-fourth each of the chicken, pepper and onions. Add another 1/2 ounce of cheese and fold over the top, unfilled half of the tortilla.
- Cook until the bottom is golden, about 2 minutes, and then flip and cook for another 2 minutes. Repeat using the remaining ingredients for the remaining three quesadillas.
