    4 oz.Hy-Vee Pepper Jack Smooth & Cheesy cheese product, diced, divided
    4(8-inch) Hy-Vee flour tortillas
    1 c.shredded rotisserie chicken, divided
    1small red bell pepper, diced, divided
    1green onion, finely sliced, divided

    Directions

    1. Heat a large nonstick skillet over medium heat.
    2. Place one tortilla in the skillet and place 1/2 ounce of cheese on half of the tortilla. Top with one-fourth each of the chicken, pepper and onions. Add another 1/2 ounce of cheese and fold over the top, unfilled half of the tortilla.
    3. Cook until the bottom is golden, about 2 minutes, and then flip and cook for another 2 minutes. Repeat using the remaining ingredients for the remaining three quesadillas.
