Description

4 (3-oz. each) Alaska cod fillets, skinless
1 tbsp. smoked paprika
½ tsp. smoked sea salt
24 green onions, cut into 2-inch pieces
1 tsp. Hy-Vee vegetable oil
16 cherry tomatoes, halved
¼ c. fresh dill
Brown rice, hot cooked, for serving

Directions

  1. In a small bowl, mix together paprika, smoked salt, and pepper. Evenly season cod with seasoning mix; set aside. 

  2. Heat a 10-inch cast-iron skillet over medium-high heat. Add green onions to cast-iron skillet. Sear until slightly chard. Remove from skillet. 

  3. Add vegetable oil to skillet. Add cod. Cook 2 to 3 minutes on each side or until internal temperature reaches 145 degrees. Remove from skillet and top with green onions. 

  4. Serve fish with fresh tomatoes, dill, and brown rice.
