    3 tbsp. Hy-Vee unsalted butter, melted
    1 tbsp. Chef Paul Prudhomme's Blackened Redfish Magic seasoning
    1 tsp. fresh lemon juice
    2 (6-oz. each) cod fillets

    Directions

    1. Preheat oven to 400 degrees. Lightly grease a cooling rack and place on a baking sheet; set aside.
    2. In a shallow bowl, combine butter, seasoning and lemon juice. Add cod and coat in butter mixture. Place cod on prepared rack on baking sheet; reserving butter mixture.
    3. Bake cod 10 minutes, remove from the oven, baste with reserved butter mixture, and bake for an additional 10 minutes.
