    1 c. Hy-Vee salt and pepper kettle cooked potato chips, crushed
    1 c. buttermilk
    1 lbs. Alaska cod fillets, cut into 4 portions

    • Aluminum foil
    • Hy-Vee nonstick cooking spray
    • 2 shallow dishes
    • Meat thermometer

    Directions

    1. Preheat oven to 375 degrees. Line baking sheet with aluminum foil and spray with nonstick cooking spray; set aside.

    2. Place crushed potato chips in a shallow dish. Place buttermilk in another shallow dish.

    3. Dip cod portions into buttermilk, allowing excess to drip off. Coat cod with potato chips making all sides are covered. Place on prepared baking sheet.

    4. Bake 20 to 25 minutes or until fish flakes easily with a fork (145 degrees).
