Serves 6
12 oz. elbow macaroni or other short pasta (3 c.)
1 (12.3 oz) pkg soft silken tofu
1 ½ c. firmly packed shredded Cheddar cheese or Cheddar-American blend (6 oz)
2 tbsp. natural margarine, soy margarine or whipped butter
salt, to taste


  1. Bring a large pot of water to a boil. Add macaroni. Stir to prevent sticking. Cook until just tender, about 10 minutes. Drain.
  2. Meanwhile, in a food processor or blender, puree the tofu until completely smooth. Transfer to a medium saucepan and add cheese and margarine. Place pan over low heat. Slowly bring to a gentle simmer, stirring often. Cook until cheese is melted, about 5 minutes.
  3. In a large bowl, combined the cooked macaroni and the cheese sauce. Stir to blend. Season with salt to taste and serve hot.
  4. If preferred, place the combined macaroni, and cheese sauce in a casserole dish. Bake at 400 degrees for 20 to 30 minutes, until the top is brown and crusty.
