Secret Macaroni and Cheese
Deliciously rich and comforting. Recipe can either be made on top of the stove, or baked in the oven.
Servings and Ingredients
|12 oz. elbow macaroni or other short pasta (3 c.)|
|1 (12.3 oz) pkg soft silken tofu|
|1 ½ c. firmly packed shredded Cheddar cheese or Cheddar-American blend (6 oz)|
|2 tbsp. natural margarine, soy margarine or whipped butter|
|salt, to taste|
- Bring a large pot of water to a boil. Add macaroni. Stir to prevent sticking. Cook until just tender, about 10 minutes. Drain.
- Meanwhile, in a food processor or blender, puree the tofu until completely smooth. Transfer to a medium saucepan and add cheese and margarine. Place pan over low heat. Slowly bring to a gentle simmer, stirring often. Cook until cheese is melted, about 5 minutes.
- In a large bowl, combined the cooked macaroni and the cheese sauce. Stir to blend. Season with salt to taste and serve hot.
- If preferred, place the combined macaroni, and cheese sauce in a casserole dish. Bake at 400 degrees for 20 to 30 minutes, until the top is brown and crusty.
