    3 peaches, pitted and diced
    3 tbsp. Hy-Vee honey
    1 tsp. Hy-Vee Dijon mustard
    ¼ tsp. cinnamon
    1 tbsp. Hy-Vee canola oil
    4 (4 oz each) boneless pork chops

    Directions

    1. In a small saucepan combine peaches, honey, mustard and cinnamon. Bring to a boil; boil for 3 minutes. Decrease heat and simmer for 10 minutes. As peaches soften, smash them with a potato masher or a fork.
    2. Meanwhile, heat oil in a large skillet over medium heat. Cook pork chops in skillet 4 to 5 minutes on each side or until internal temperature reaches 145 degrees.
    3. Let chops stand for 3 minutes before serving. Top with peach sauce.
