Servings and Ingredients
|1 large onion, chopped|
|1 tbsp. butter|
|1 can(s) chicken broth|
|1 c. salsa|
|⅛ tsp. garlic powder|
|1 c. uncooked long-grain rice|
|4 chicken breasts|
|¾ c. shredded Cheddar cheese|
- Melt butter in a large skillet. Saute onion until tender.
- Stir in broth, salsa and garlic powder and bring to a boil. Stir in rice. Place chicken on top of rice. Cover and cook 10 minutes over medium heat. Turn chicken over and cook 15 minutes more, or until internal temperature reaches 165 degrees. Turn heat off.
- Top with cheese. Cover to melt cheese.
