1 tbsp. Hy-Vee Select garlic-flavored olive oil
1 medium onion, chopped
1 green pepper, seeded and chopped
2 (14.5 oz each) cans Hy-Vee diced tomatoes
2 medium zucchini, cut into 1-inch chunks
1 tsp. herbes de Provence
Hy-Vee sea salt and Hy-Vee pepper, to taste
Hot, cooked Hy-Vee whole wheat penne, optional

Directions

  1. Heat oil in a large pot over medium heat. Cook onions and green pepper, stirring occasionally, until soft, about 10 minutes.
  2. Stir in tomatoes, zucchini and herbes de Provence. Season to taste with salt and pepper.
  3. Cover and simmer until vegetables are very tender, stirring occasionally, about 30 minutes. If desired, season with additional salt and pepper.
  4. Serve over penne if desired.
