1 sugar pumpkin (pie pumpkin), up to 4 pounds


  1. Preheat oven to 350 degrees. Cut off the pumpkin's top. Scrape out the goop and seeds. Save the seeds for roasting if you like).
  2. Cut pumpkin into big pieces and place the pieces on a baking sheet. Bake the pumpkin until nice and soft, about 45 minutes. Let it cool.
  3. Scrape the pulp from the skin, put into a food processor and pulse until it is smooth.
