For a special treat, serve pumpkin soup out of a hollowed-out pumpkin or gourd!

1 (13.75 oz) can vegetable broth
2 carrots, peeled and diced
1 large onion, chopped
⅓ tsp. salt
⅛ tsp. pepper
16 oz. pumpkin (fresh pureed or canned)
1 tsp. cinnamon
2 c. soy milk
16 oz. cubed tofu, optional
ground nutmeg, optional


  1. Place broth, carrots, onion, salt and pepper in a large pot. Simmer uncovered for 10 to 15 minutes, until the carrots are soft.
  2. Mix in pumpkin, cinnamon and soy milk. Simmer for another 10 minutes.
  3. For more protein, add cubed tofu.
  4. For garnish, sprinkle with freshly ground nutmeg.
