Pumpkin Soup

Description
For a special treat, serve pumpkin soup out of a hollowed-out pumpkin or gourd!
Servings and Ingredients

1 (13.75 oz) can vegetable broth | ||
2 carrots, peeled and diced | ||
1 large onion, chopped | ||
⅓ tsp. salt | ||
⅛ tsp. pepper | ||
16 oz. pumpkin (fresh pureed or canned) | ||
1 tsp. cinnamon | ||
2 c. soy milk | ||
16 oz. cubed tofu, optional | ||
ground nutmeg, optional |
Directions
- Place broth, carrots, onion, salt and pepper in a large pot. Simmer uncovered for 10 to 15 minutes, until the carrots are soft.
- Mix in pumpkin, cinnamon and soy milk. Simmer for another 10 minutes.
- For more protein, add cubed tofu.
- For garnish, sprinkle with freshly ground nutmeg.
