    ¼ c. Hy-Vee brown sugar, divided
    2 tbsp. Hy-Vee all-purpose flour
    1 tsp. ground cumin
    4 (5 to 6 oz each) boneless pork loin chops
    2 c. fresh mixed berries
    ¼ c. chopped onion
    ⅓ c. cider vinegar
    2 tbsp. Hy-Vee Select olive oil

    Directions

    1. Combine 2 tablespoons of the brown sugar, flour, cumin, and salt to taste. Rub into pork chops. Refrigerate 30 minutes.
    2. Meanwhile, for berry salsa, combine berries, onion, remaining 2 tablespoons brown sugar and vinegar in medium saucepan. Bring to boiling. Cover and heat; simmer 5 minutes. Remove from heat and let stand 5 minutes. Season with salt and pepper to taste.
    3. Heat oil in large skillet over medium-high heat; add pork chops. Cook 3 to 5 minutes on each side or until internal temperature reaches 145 degrees. Remove, let stand for 3 minutes and serve with berry salsa.
