    Serves 6
    2 medium nectarines, pitted, cut into 1/2-inch thick slices (about 8 oz)
    2 large plums, pitted, cut into 1/2-inch thick slices (about 8 oz)
    ¼ c. sugar (use up to 1/3 cup if needed)
    2 tsp. cornstarch
    2 tsp. Spice Islands pure vanilla extract
    ¼ tsp. Spice Islands ground nutmeg
    prepared pie dough for one 9-inch pie shell


    1. In medium bowl, combine nectarines, plums, 1/4 to 1/3 cup sugar, cornstarch, vanilla and nutmeg, tossing to mix well.
    2. Place pie dough flat on ungreased baking sheet. Arrange fruit mixture on dough, leaving 2-inch border. Gently fold border of dough over fruit; sprinkle with sugar, as desired.
    3. Bake at 425 degrees F for 30 minutes until crust is golden brown. Cool slightly on wire rack. Serve warm.
