Peanut Toffee Diamonds

1 c. chunky peanut butter, divided | ||
1 c. packed brown sugar | ||
1 large egg | ||
1 tsp. vanilla | ||
½ tsp. salt | ||
2 c. sifted flour | ||
1 c. chocolate chips, melted | ||
1 packet(s) salted peanuts |
Directions
- Preheat oven to 325 degrees. Spray a 10-by-15-inch rimmed baking sheet with nonstick cooking spray.
- Beat together butter and 1/2 cup peanut butter; add sugar gradually. Beat in egg and vanilla. Stir in salt and flour. Pat into prepared pan.
- Bake about 25 minutes.
- Combine melted chocolate and remaining 1/2 cup peanut butter. Spread over hot cookie base.
- Cut into diamonds while warm. Place peanut in center of each diamond.
