    ½ tsp. kosher salt
    1 tsp. Hy-Vee lemon pepper seasoning
    ½ tsp. Old Bay seasoning
    ½ c. Hy-Vee all-purpose flour
    1 Hy-Vee large egg, beaten
    1 ½ c. Hy-Vee plain bread crumbs
    Hy-Vee canola oil, as needed

    Directions

    1. Preheat oven to 325 degrees. Pat fish dry with paper towels; season with salt, lemon pepper and Old Bay seasoning.

    2. Place flour, egg and bread crumbs in three separate shallow bowls.
    3. Coat one side of fish with flour, egg and bread crumbs. Repeat for each piece of fish; set aside.
    4. Heat oil in a cast iron or oven-safe, non-stick skillet over medium heat. Slowly lay fish breading side down and cook for about 5 minutes. Using a spatula, gently lift the edges of the fish, allowing oil to reach all the breaded sides.
    5. Carefully flip the fish over and bake for 3 to 5 minutes, or until internal temperature of fish reaches 145 degrees. Serve immediately.
