Directions
- Place flour, egg and bread crumbs in three separate shallow bowls.
- Coat one side of fish with flour, egg and bread crumbs. Repeat for each piece of fish; set aside.
- Heat oil in a cast iron or oven-safe, non-stick skillet over medium heat. Slowly lay fish breading side down and cook for about 5 minutes. Using a spatula, gently lift the edges of the fish, allowing oil to reach all the breaded sides.
- Carefully flip the fish over and bake for 3 to 5 minutes, or until internal temperature of fish reaches 145 degrees. Serve immediately.
