No Churn Peppermint Ice Cream

3 c. heavy cream | ||
1 (14 oz) can sweetened condensed milk | ||
1 tsp. vanilla extract | ||
½ tsp. peppermint extract | ||
Pinch of salt | ||
3 large candy canes, crushed | ||
½ c. crème de menthe baking chips, such as Andes Crème de Menthe baking chips |
Directions
- Beat heavy cream using an electric mixer until stiff peaks form, about 3 minutes. Stir in sweetened condensed milk, vanilla and peppermint extracts and salt. Whip until thoroughly combined and stiff peaks form again.
- Fold in crushed candy cane pieces and crème de menthe baking chips, just until combined.
- Pour ice cream batter into a loaf pan and place in freezer until firm, about 6 hours.
