    2 tbsp. stone ground mustard
    3 tbsp. Hy-Vee orange marmalade
    ¼ tsp. Hy-Vee salt
    1 lbs. salmon fillet, cut into 4 fillets
    10 kumquats, chopped
    1 tbsp. Hy-Vee brown sugar
    1 tbsp. Hy-Vee Select white wine vinegar

    Directions

    1. Combine mustard, marmalade and salt in a small bowl. Set aside.
    2. Place salmon fillets skin-side-down on a greased baking pan. Spread each fillet with mustard mixture.
    3. Bake in a 425-degree oven for 12 to 15 minutes or until fish flakes easily with a fork.
    4. Meanwhile, in a small bowl, combine kumquats, brown sugar and vinegar.
    5. Top each salmon fillet with kumquat mixture before serving.
