Minty syrup: | ||
¼ c. Hy-Vee granulated sugar | ||
¼ c. water | ||
¼ c. chopped fresh mint | ||
½ tsp. ground ginger | ||
Fruit salad: | ||
1 medium watermelon, cut into 1-inch chunks | ||
1 pt. fresh raspberries | ||
1 pt. fresh blueberries | ||
1 pt. fresh strawberries, hulled and halved | ||
2 c. halved seedless grapes | ||
Fresh mint leaves |
Directions
- In small saucepan combine sugar, water, mint and ginger. Bring to boiling; reduce heat and simmer 5 minutes to thicken slightly. Set aside to cool.
- Place watermelon, raspberries, blueberries, strawberries and grapes in large bowl. Add minty syrup and toss to coat.
- Top with mint leaves and serve immediately.
