2 tbsp. red onion, finely chopped
1 English cucumber, chopped
1 avocado, peeled, pitted and diced
Fresh lemon juice
1 tbsp. Gustare Vita olive oil, plus additional as needed
2 tbsp. fresh mint leaves, chiffonade
½ c. Soiree feta cheese, crumbled
Hy-Vee salt
Hy-Vee ground black pepper
1 medium watermelon, sliced into quarters and then sliced into 1-½-inch wedges

  • Gas or charcoal grill
  • Medium bowl
  • Silicone pastry brush


  1. Preheat a gas or charcoal grill to high.

  2. In a medium bowl, combine red onion, cucumber, avocado, lemon, olive oil, mint, and feta cheese. Season with salt and pepper; set aside.

  3. Brush watermelon wedges with olive oil and season with salt and pepper.

  4. Grill 4 to 6 minutes per side or until caramelized with grill marks. Immediately place watermelon on a serving platter and top with salad.
