2 tbsp.finely diced red onion
1English cucumber, diced
1avocado, peeled, pitted and diced
Squeeze of fresh lemon
1 tbsp.olive oil
2 tbsp.chiffonade fresh mint leaves
½ c.cubed feta cheese
Salt and pepper, to taste
1medium watermelon, sliced into quarters and then sliced into 1-½-inch wedges
Olive oil, as needed

Directions

  1. In a medium bowl, combine red onion, cucumber, avocado, lemon, olive oil, mint and feta cheese. Season with salt and pepper; set aside.
  2. Preheat gas grill to high.
  3. Brush watermelon wedges with olive oil and season with salt and pepper.
  4. Grill 4 to 6 minutes per side or until caramelized with grill marks. Immediately place watermelon on a serving platter and top with salad.
