Grilled Watermelon with Avocado, Cucumber and Feta Salad (Get Cooking)
Servings and Ingredients
|2 tbsp.||finely diced red onion|
|1||English cucumber, diced|
|1||avocado, peeled, pitted and diced|
|Squeeze of fresh lemon|
|1 tbsp.||olive oil|
|2 tbsp.||chiffonade fresh mint leaves|
|½ c.||cubed feta cheese|
|Salt and pepper, to taste|
|1||medium watermelon, sliced into quarters and then sliced into 1-½-inch wedges|
|Olive oil, as needed|
- In a medium bowl, combine red onion, cucumber, avocado, lemon, olive oil, mint and feta cheese. Season with salt and pepper; set aside.
- Preheat gas grill to high.
- Brush watermelon wedges with olive oil and season with salt and pepper.
- Grill 4 to 6 minutes per side or until caramelized with grill marks. Immediately place watermelon on a serving platter and top with salad.
