Preheat a gas or charcoal grill to high.

|2 tbsp.||red onion, finely chopped|
|1||English cucumber, chopped|
|1||avocado, peeled, pitted and diced|
|Fresh lemon juice|
|1 tbsp.||Gustare Vita olive oil, plus additional as needed|
|2 tbsp.||fresh mint leaves, chiffonade|
|½ c.||Soiree feta cheese, crumbled|
|Hy-Vee ground black pepper|
|1||medium watermelon, sliced into quarters and then sliced into 1-½-inch wedges|

- Medium bowl
- Silicone pastry brush
In a medium bowl, combine red onion, cucumber, avocado, lemon, olive oil, mint, and feta cheese. Season with salt and pepper; set aside.
Brush watermelon wedges with olive oil and season with salt and pepper.
Grill 4 to 6 minutes per side or until caramelized with grill marks. Immediately place watermelon on a serving platter and top with salad.
