    4 c. cubed watermelon
    3 tbsp. crumbled feta cheese
    1 tbsp. coarsely chopped fresh mint leaves

    Directions

    1. Whisk the balsamic vinegar and extra-virgin olive oil together in a small bowl.
    2. Place watermelon in serving dish; drizzle with mixture and toss lightly.
    3. Add feta cheese and chopped mint and mix until just combined.
    4. Serve immediately.
