Microwave Caramel Corn

1 c. packed brown sugar | ||
½ c. butter or margarine | ||
¼ c. light Karo syrup | ||
½ tsp. salt | ||
½ tsp. baking soda | ||
½ tsp. vanilla |
Directions
- Place the popped popcorn in a large container.
- In a 2-quart casserole dish, combine brown sugar, butter or margarine, Karo syrup and salt. Microwave on HIGH for 3 minutes.
- Stir until combined. Stir in baking soda and vanilla. Pour over popcorn. Mix well.
- Cover and microwave for 1-1/2 minutes.
- Stir popcorn. Microwave for another 1-1/2 minutes. Spread on a rimmed baking sheet to cool.
