    6 large baking potatoes
    1 c. diced carrots
    ½ c. diced green beans
    1 recipe Sloppy Joes (see recipe on hy-vee.com)
    ¼ tsp. salt
    ⅛ tsp. pepper
    1 c. hot water
    paprika, for garnish

    Directions

    1. Bake potatoes in a 425-degree oven for 45 minutes or until they are tender when pricked with a fork.
    2. While potatoes are baking, cook carrots and green beans in a little simmering water until tender. Prepare the Sloppy Joes recipe.
    3. Drain carrots and beans and mix into the Sloppy Joes mixture.
    4. After removing potatoes from oven, reduce oven temperature to 350 degrees. Using a pot holder to hold each potato, sliced the baked potatoes in half the long way.
    5. Scoop out the white insides, leaving a 1/4-inch shell. Place shells on a baking sheet. Place white insides in a mixing bowl.
    6. Using an electric mixer or potato masher, mash potatoes with salt and pepper. Add hot water as needed to make potatoes the desired consistency.
    7. Place 1/3 cup Sloppy Joes filling into each of the 12 potato shells.
    8. Spread 1/2 cup mashed potatoes over top of each shell to cover the filling.
    9. Sprinkle with paprika. Bake at 350 degrees for 20 minutes, until heated through.
