    ¼ c. flax seed
    ¼ c. ground flax seed
    1 ½ c. all-purpose flour
    ½ tsp. baking powder
    ½ tsp. salt
    4 tsp. butter or margarine, melted
    ½ c. skim milk

    Directions

    1. Preheat oven to 325 degrees.
    2. Add flax seed, ground flax, flour, baking powder, salt and margarine (or butter) to the bowl of a stand-up mixer. With the paddle attachment, mix on low speed until the mixture resembles coarse meal. Stir in milk and mix until mixture forms a soft dough. You can also mix the dough by hand.
    3. Wrap dough in plastic wrap and chill for 10 minutes.
    4. Divide the dough into quarters. Turn out dough onto a lightly floured board.
    5. Roll out one of the quarters very thinly to 1/16-inch thick. Cut into 2-1/2-inch squares. Transfer to an ungreased baking sheet.
    6. Repeat with the other quarters of the dough.
    7. Bake 20 minutes, until crisp and golden.
    8. Variations:
    9. Onion: add 1 tablespoon onion soup mix.
    10. Cheese: add 1 cup finely shredded cheddar cheese.
    11. Italian: add 1 tablespoon oregano and 1 cup finely shredded mozzarella cheese.
