    ¼ c. Italian breadcrumbs
    2 tbsp. Hy-Vee shredded Parmesan cheese
    ¼ c. Hy-Vee all-purpose flour
    2 Hy-Vee large egg whites, lightly beaten
    2 tsp. Hy-Vee Select olive oil
    4 (2 oz each) boneless pork loin chops

    Directions

    1. Combine breadcrumbs and Parmesan cheese in a shallow dish. Place flour in a shallow dish; place egg whites in another shallow dish.

    2. Dredge pork in flour, dip in egg whites, and dredge in breadcrumb mixture. Heat oil in a large nonstick skillet over medium-high heat. Add pork to pan. Cook for about 3 minutes or until lightly browned. Spray surface of chops with cooking spray; turn chops over. Cook another 3 minutes or until internal temperature reaches 145 degrees. Let rest for 3 minutes before serving.
