Heat oil in a large skillet over medium-high heat. Season pork chops with salt and pepper. Cook pork chops for 5 minutes. Turn and cook an additional 5 minutes or until interior temperature reaches 145 degrees. Remove pork chops from skillet. Keep warm.
Remember to pre-heat the skillet on medium-high heat to ensure a hard sear on the pork chops for extra delicious flavor.

|1 tbsp. Hy-Vee Select olive oil|
|4 (3 oz each) pork chops|
|Hy-Vee salt, to taste|
|Hy-Vee pepper, to taste|
|1 small onion, sliced thinly|
|1 tbsp. Hy-Vee brown sugar|
|¼ c. Hy-Vee 100% apple juice|
|1 tbsp. Hy-Vee Select balsamic vinegar|
|1 c. Stemlit Washington red cherries, pitted and halved|

Add onions to skillet. Cook and stir until onions are very soft, about 5 minutes. Reduce heat to low. Stir in sugar. Cook and stir until onions are caramelized and tender, about 5 additional minutes.
Stir in apple juice, balsamic vinegar and cherries. Bring to a boil, stirring constantly. Return pork chops and any accumulated juices to the skillet.
