1 tbsp. Hy-Vee Select olive oil
4 (3 oz each) pork chops
Hy-Vee salt, to taste
Hy-Vee pepper, to taste
1 small onion, sliced thinly
1 tbsp. Hy-Vee brown sugar
¼ c. Hy-Vee 100% apple juice
1 tbsp. Hy-Vee Select balsamic vinegar
1 c. Stemlit Washington red cherries, pitted and halved

  • Meat thermometer

Directions

  1. Heat oil in a large skillet over medium-high heat. Season pork chops with salt and pepper. Cook pork chops for 5 minutes. Turn and cook an additional 5 minutes or until interior temperature reaches 145 degrees. Remove pork chops from skillet. Keep warm.

  2. Add onions to skillet. Cook and stir until onions are very soft, about 5 minutes. Reduce heat to low. Stir in sugar. Cook and stir until onions are caramelized and tender, about 5 additional minutes.

  3. Stir in apple juice, balsamic vinegar and cherries. Bring to a boil, stirring constantly. Return pork chops and any accumulated juices to the skillet.
