    10 oz. (1-inch-thick) beef tenderloin
    Hy-Vee Select olive oil
    Hy-Vee salt and Hy-Vee black pepper, to taste
    6 tbsp. bottled horseradish sauce
    18 prepared Petite Parmesan Crisps
    Italian parsley, for garnish

    Directions

    1. Preheat broiler.
    2. Brush beef tenderloin with olive oil; sprinkle with salt and pepper. Place beef on the unheated rack of a broiler pan.
    3. Broil 3 to 4 inches from the heat for 12 to 14 minutes for medium-rare (145 degrees).
    4. Cover and let stand for 5 minutes; cut beef into thin strips.
    5. Add 1 teaspoon bottled horseradish sauce to each crisp. Top with a beef slice. Garnish with Italian parsley.
