Beef and Horseradish Cream

10 oz. (1-inch-thick) beef tenderloin | ||
Hy-Vee Select olive oil | ||
Hy-Vee salt and Hy-Vee black pepper, to taste | ||
6 tbsp. bottled horseradish sauce | ||
18 prepared Petite Parmesan Crisps | ||
Italian parsley, for garnish |
Directions
- Preheat broiler.
- Brush beef tenderloin with olive oil; sprinkle with salt and pepper. Place beef on the unheated rack of a broiler pan.
- Broil 3 to 4 inches from the heat for 12 to 14 minutes for medium-rare (145 degrees).
- Cover and let stand for 5 minutes; cut beef into thin strips.
- Add 1 teaspoon bottled horseradish sauce to each crisp. Top with a beef slice. Garnish with Italian parsley.
