    2 ½ c. flour, sifted
    1 tsp. salt
    1 c. shortening
    1 egg, separated
    milk
    8 c. sliced apples
    ¾ to 1 c. sugar
    1 tsp. cinnamon
    flour
    1 c. powdered sugar
    3 to 4 tsp milk

    Directions

    1. Combine flour and salt. Cut in shortening.
    2. Beat egg yolk in measuring cup. Add enough milk to make 2/3 cup liquid. Mix well.
    3. Stir egg/milk mixture into flour mixture.
    4. On floured surface, roll half the dough to form a 12-by-17-inch rectangle. Fit dough into and up sides of a 10-1/2-by-15-inch (jelly roll) baking pan. Top dough with apple slices.
    5. Combine sugar, cinnamon and a little flour. Sprinkle on apples.
    6. Roll remaining dough to form a 10-1/2-by-15-1/2-inch rectangle. Place dough over apples. Seal edges and cut slits in top.
    7. Beat egg white until frothy. Brush on crust.
    8. Bake at 375 degrees for 50 minutes.
    9. Combine powdered sugar and 3 to 4 teaspoons milk. Drizzle on warm bars.
