1 ½ c. coarsely chopped green bell pepper
3 c. (16 oz) diced cooked potatoes
2 c. chopped fresh tomatoes
¼ c. Hy-Vee mild taco sauce
½ tsp. dried minced garlic
¼ tsp. black pepper

    Directions

    1. Stir in tomatoes, taco sauce, garlic and black pepper. Lower heat and simmer for 5 minutes or until mixture is heated through, stirring often.
    2. In a large skillet sprayed with olive oil-flavored cooking spray, saute onion and green pepper for 5 minutes.
    3. Add potatoes. Mix well to combine. Continue cooking for another 5 minutes, stirring often.
