1 ½ c. Hy-Vee Short Cuts zucchini and summer squash slices
½ c. red onion, cut into wedges
2 tbsp. Gustare Vita olive oil
1 tbsp. fresh thyme, chopped
Hy-Vee salt
Hy-Vee ground black pepper
Lemon wedge, for serving

Directions

  1. Prepare a charcoal or gas grill for direct cooking over medium-heat. Prepare an 18x12-inch double layer of foil.

  2. Toss together bell pepper strips, zucchini and summer squash slices, red onion wedges, olive oil, and thyme. Season, to taste, with salt and black pepper. Place on foil and fold into a packet.

  3. Grill 20 minutes or until vegetables are tender. Squeeze a lemon wedge over top just before serving.
