    1 tbsp. Hy-Vee Select garlic-flavored olive oil
    ½ c. chopped onion
    ¾ c. chopped parsley
    1 c. Hy-Vee reduced-sodium chicken broth
    6 medium potatoes, thinly sliced
    Hy-Vee salt and Hy-Vee pepper, to taste

    Directions

    1. Heat oil in a large skillet over medium-high heat. Add onion and sauté until tender, about 3 to 5 minutes. Remove from heat.
    2. Stir in parsley and broth. Layer sliced potatoes on top of onion mixture; return to heat and bring to a boil.
    3. Reduce heat, cover and simmer for 20 minutes, or until potatoes are tender. Season with salt and pepper, if desired.
