Warm Potato Salad with Green Beans
Servings and Ingredients
|1 lbs. small red, white or yellow new potatoes, halved or quartered|
|12 oz. fresh green beans, trimmed and cut into 1-inch pieces (about 2 cups)|
|¼ c. sun-dried tomatoes in olive oil, drained and chopped|
|⅓ c. bottled fat-free Parmesan or Italian salad dressing|
|4 slice(s) Hy-Vee bacon, crisply-cooked and crumbled, optional|
- Bring large pot of salted water to boiling; add potatoes and green beans. Cook, covered, until tender, about 10 to 12 minutes; drain. Return to pot.
- Add tomatoes and salad dressing; toss gently until well coated.
- Transfer potatoes and beans to serving bowl. Sprinkle with bacon, if desired.
