Sweet Potato Baked Beans

1 | (40 oz) can sweet potatoes, drained and mashed | |
1 ½ c. | Hy-Vee vegetarian baked beans | |
¼ c. | Hy-Vee orange juice | |
5 tbsp. | Hy-Vee butter, melted and divided | |
1 tsp. | Hy-Vee salt | |
3 | whole Hy-Vee honey graham crackers, finely crushed | |
2 tbsp. | packed Hy-Vee brown sugar |
Directions
- Preheat oven to 350 degrees.
- Mix potatoes, beans, orange juice, 2 tablespoons of butter and salt in a large bowl. Pour into a greased 8-by-8-inch baking dish.
- Combine graham crackers, remaining butter and brown sugar. Sprinkle on top of potato mixture.
- Bake until top is golden brown, approximately 30 minutes.
