    8 oz. Hy-Vee fettuccine
    8 oz. Italian turkey sausage
    1 (14.5 oz) can Hy-Vee Italian-style diced tomatoes
    3 c. baby spinach
    Hy-Vee shredded Parmesan cheese, optional

    Directions

    1. Prepare fettuccine according to package directions. Drain in a colander over a bowl, reserving 1/2 cup cooking liquid.
    2. While pasta cooks, cook sausage in a large non-stick skillet over medium-high heat until cooked through, about 5 minutes. Add tomatoes and cover and cook 2 minutes. Mash tomatoes with the back of a wooden spoon to break them up. Cover pan; reduce heat to low and cook 3 minutes. Remove from heat and stir in prepared pasta, reserved cooking liquid and spinach; toss well. Sprinkle with Parmesan cheese, if desired.
