¼ c. San-J® Teriyaki Sauce
8 oz. firm Mori-Nu® Tofu, cubed
1 tbsp. peanut or canola oil
1 medium red pepper, cut into strips
½ chopped green onions
2 ⅔ c. cooked Lundberg Farms® brown rice
1 (8 ounce) can pineapple tidbits in juice, drained
1 c. peanuts, chopped

Directions

  1. Pour teriyaki sauce over tofu in shallow dish. Refrigerate 5 to 10 minutes to marinate. Drain tofu; reserve teriyaki sauce.
  2. Heat oil in large skillet on medium-high heat. Add tofu; cook 3 to 4 minutes or until golden brown on all sides, stirring occasionally. Remove from skillet.
  3. Add red pepper to skillet; cook and stir 2 minutes. Add green onion; cook and stir 1 minute. Add rice and pineapple; mix lightly. Cook 2 to 3 minutes or until heated through, stirring frequently. Add tofu, peanuts and reserved teriyaki sauce; mix lightly. Cook until heated through, stirring occasionally.
