2 tbsp. green onion, thinly sliced
Dressing
1 tbsp. plus 1 tsp. Hy-Vee creamy peanut butter
1 tbsp. Hy-Vee Thai sweet chili sauce
1 tbsp. Hy-Vee less sodium soy sauce
2 tsp. fresh lime juice
1 tsp. Hy-Vee honey

Directions

  1. Combine finely shredded red cabbage, shredded zucchini, shredded carrot, edamame, fresh cilantro, cashews, and green onion in a medium bowl. Set aside.

  2. Whisk together creamy peanut butter, chili sauce, soy sauce, fresh lime juice, and honey in a small bowl. Drizzle over cabbage mixture; toss to coat.
