½ lbs. boneless pork loin chop, cut into strips
2 tsp. Tex-Mex chipotle seasoning blend
1 tbsp. Hy-Vee Select olive oil
2 large whole grain pita bread rounds
1 red bell pepper, seeded and cut into strips
½ c. red onion, thinly sliced
1 c. fresh arugula
2 tbsp. toasted pepitas
¼ c. Hy-Vee Select roasted garlic hummus, divided

Directions

  1. Season pork strips with chipotle seasoning blend. In a medium skillet, heat olive oil over medium heat. Add pork. Cook and stir until pork is tender cooked through (145 degrees). Cool and set aside.

  2. To assemble pitas, spread pita bread with hummus and top with pork strips, bell pepper strips, red onion and arugula. Sprinkle with pepitas.

    To tote for lunches, place single-serving portions of pork strips, pita bread, bell pepper strips, sliced onion, arugula and pepitas each in individual resealable plastic bags. Transfer 2-tablespoon portions of hummus to two airtight containers. Place in an insulated cooler with ice pack or chill all ingredients except for pita bread and pepitas until assembly.
