2 tbsp. pickled red onions brine

Things To Grab

  • Charcoal or gas grill
  • Silicone pastry brush
  • Tongs
  • Sharp knife
  • Large pot
  • Colander
  • Large bowl
  • 6 (12-inch) skewers
  • Large serving platter

Directions

  1. Preheat a charcoal or gas grill with a greased grill rack for direct cooking over medium heat (350 degrees).

  2. Brush corn with 1 Tbsp. olive oil. Grill corn for 12 to 15 minutes or until tender and slightly charred, turning occasionally. Remove from grill; cool slightly. Cut corn kernels from cobs in large shards. Place in a large bowl; set aside.

  3. Meanwhile, cook gnocchi according to pkg. directions. Drain and rinse with cold water. Pat gnocchi dry with paper towel and place in large bowl.

  4. Add tomatoes, 1 Tbsp. oil and 2 tsp. dressing mix to gnocchi in bowl; toss to coat. Alternately thread a few gnocchi with each tomato onto 6 (12-in.) skewers. Brush skewers with 1 Tbsp. oil.

  5. Grill skewers for 4 to 6 minutes or until the gnocchi are golden and slightly crisp and tomatoes are slightly charred, turning occasionally. Remove from grill; set aside.

  6. Add arugula, pickled onions and brine, remaining 1 Tbsp. oil and remaining 2 tsp. dressing mix to corn in large bowl; toss to combine.

  7. To serve, transfer arugula mixture to a large serving platter; top with skewers. Serve immediately.
