    Who needs pasta salad when you can have gnocchi salad? These fluffy potato dumplings are dressed with Gustare Vita pesto sauce and paired with burrata cheese and fresh arugula.

    1(8-oz.) pkg. burrata cheese, cut into small cubes
    3 tbsp.Gustare Vita pesto
    2 tbsp.Gustare Vita extra virgin olive oil
    1 c.red cherry tomatoes, and/or yellow cherry tomatoes halved
    2 c.arugula

    Directions

    1. Cook gnocchi according to package directions. Drain and rinse with cold water. Place gnocchi in a large bowl. Stir in burrata cheese, pesto, and olive oil. Lightly toss in tomatoes. Cover and refrigerate for up to 6 hours. Just before serving, stir in arugula.
