1 | (10.5 oz) package silken tofu | |
1 tbsp. | lemon juice | |
¼ tsp. | garlic powder | |
¾ tsp. | onion powder | |
½ tsp. | dried tarragon | |
¼ tsp. | salt | |
1 | (10 oz) package frozen chopped spinach, thawed | |
1 c. | coarsely shredded carrots | |
¼ c. | chopped green onion, optional |
Directions
- Puree the tofu and lemon juice in a blender until smooth. Whirl in garlic powder, onion powder, tarragon and salt just to blend. Scrape into a mixing bowl.
- Squeeze spinach as dry as possible. Stir spinach, carrots and green onion into tofu mixture. Mix well.
- Refrigerate until serving time. Serve with crackers, pita triangles or baguette slices.
- Serve as a hot hors d'ouevres or sandwich by spreading spinach mixture on bread, sprinkling with a little grated soy Parmesan cheese, and broiling until it starts to brown.
