½ c. Hy-Vee all-purpose flour
1 c. Hy-Vee 2%-reduced-fat milk, plus additional, as needed, for thinning
1 c. Hy-Vee heavy whipping cream
1 lbs. Fresh green beans, trimmed and sliced in half lengthwise
1 (8-oz.) pkg. sliced white mushrooms
Hy-Vee salt
1 (6-oz.) container French's French-fried onions

Directions

  1. Preheat oven to 200 degrees. Spray a large casserole dish with nonstick cooking spray; set aside.

  2. Melt 2 tablespoons butter in a large skillet over medium heat. Sauté mushrooms until tender, about 5 to 7 minutes. Remove from skillet and set aside. Wipe out skillet.

  3. In same skillet, melt remaining butter and slowly whisk in flour. Cook over medium heat stirring constantly until mixture is bubbly and smells nutty, about 1 minute.

  4. Slowly whisk in milk. Bring to a boil. Add cream and stir well to combine. Bring to a boil. Allow mixture to simmer until thickened.

  5. Add mushrooms and green beans to skillet. Cover and simmer until green beans are fork-tender. About 5 to 10 minutes. Season with salt.

  6. Transfer green bean mixture to prepared baking dish and top with French fried onions. Bake for 5 minutes, or until heated through. Remove from oven and serve warm.
